Organic Speck
Speck is a typical Trentino product made from the hind leg of the pig which is rounded at the tip, trimmed, peeled and placed in a dry brine consisting of salt, pepper and juniper. This phase lasts at least three weeks during which the Speck is continuously massaged and turned. It is then smoked in a room with natural beech wood shavings and juniper berries to acquire its typical taste and aroma and moves on to the maturation phase, which can vary between 3-4 months for a semi-ripe Speck and 6 months for a fully mature product. The seasoning takes place in the pure mountain air.
Speck is excellent served on its own as a savory snack or antipasto. You could also create a meat and cheese board pairing slices of speck with cheese like Piave DOP, which has light fruit flavors that contrast perfectly to the smokiness of the speck.
