Orecchiette have been the standard of the artisan pasta tradition in the southern region of Apulia since the Middle Ages. Thinner in the center than at the edges, which provides a pleasant contrast when tasted, they are named for their concave ear shape. This makes them very versatile when it comes to surprising with all kinds of dishes, and together with the roughness of their surface it allows them to retain all kinds of seasoning very well: vegetables, meat, fish... although we recommend you try their traditional preparation alla pugliese: with broccoli, anchovies and a naughty pinch of chili.
