The quintessential Calabrian delicacy, succulent, creamy and spicy, in all its intensity and authenticity. Its history has a hint of poetic justice to it, since the poor used to make it with the remains of the pig after the landowners kept the best parts of the meat. Thanks to their inventiveness, they obtained an organoleptically richer food than the one their masters ate. Today, Sorrentino has turned it into a gourmet wonder, preparing it with the noble parts of the pig, smoking them and wisely combining the two best Calabrian chillies: the pipereju, long, thin, red and spicy, and the tunduliju, round, sweet and fleshy.
