Mozzarella di Bufala Figliata

The 'figliata' is a fresh stretched-curd cheese made from bufala milk (pasteurized or not), which encloses inside it cow milk cream and bufala cherries. Rennet is added to the milk and sent to the coagulation phase. Maturation is achieved through natural lactic fermentation. Once the maturation phase is completed, the curd is stretched and hand-worked until it takes the shape of a sheet inside which the cream mixed with cherries will be enclosed. After a brief rest in cold water for firming, the 'figliata' is salted in brine. The product is sold in packages with whey.
