The Monnalisa line of pecorinos is produced by Salcis with milk from its sheepfold in the Crete Senesi, two kilometres from Siena. This pecorino is made from fresh pasteurised sheep's milk, processed using traditional methods and the addition of selected ferments. It is a mild pecorino with a delicate, aromatic flavour.
