Only between September and October is it possible to find the best wild fennel seeds along the paths leading to the top of Mount S. Costanzo; just before they open and fall to the ground, they are ready to give all their fragrance to an infusion which, produced only once a year and in limited quantities, gives us a sublime liqueur with an inimitable taste.
