This short durum wheat pasta is a classic of the great peasant culinary culture of the island of Sardinia, where it used to be prepared to celebrate special occasions such as popular festivals or weddings. The peasant women made the gnocchetti sardi by passing them through the end of a straw basket, thus giving them that striated shape that helps both to enjoy their texture and to retain the dense sauces of meat, fish or vegetables. A good example is the gnocchetti alla campidanese: long-cooked ragout with fresh sausage and onion, spiced with saffron or aniseed and served with grated Sardinian Pecorino cheese.
