Fusilli originate from central and northern Italy, where they were made by hand by rolling them quickly around a knitting needle. Hence their helix shape, perfect for retaining sauces and ingredients in the undulations of the pasta. Accompanied with parmesan or pecorino cheese, with meat or ricotta-based sauces, with Mediterranean vegetables such as peppers or aubergine or with pesto and cherry tomatoes, fusilli will highlight both the simplest and the most elaborate seasonings, and will be up to the task even when you throw yourself into a complicated culinary experiment.
