Yellowfin tuna, also called Yellowfin or Yellowfin (because of its peculiar yellow fins), is a migratory species caught mainly in tropical and equatorial waters and is perhaps the most widely used tuna for canning. Its flesh is firm and pinkish in colour. Once the best specimens have been selected and the cooking process has been completed, the fish is prepared and packaged using traditional techniques, blanched in water and salt.
