The quintessential ingredient of the Italian New Year's celebrations, along with lentils, which are traditionally eaten to ensure a year full of health and prosperity, this sausage is delicious and unique: its filling includes defatted pork rind flavoured with spices, giving it a particularly smooth texture after cooking. With a delicate, exquisite and balanced flavour, Clai's cotechino can be slow cooked at a low heat, doing a very good job of maintaining its shape once cooked and cut, and is also suitable for more sophisticated preparations such as in a pastry crust: wrapped in flour, polenta or puff pastry and deliciously baked.
