Short pasta ideal for the simple and evocative recipes typical of Campania, which bring to the table the aromas, flavors and textures of the sea of Naples. It is named for its resemblance to squid rings, and there is also a traditional recipe known as calamarata that combines both ingredients with fresh tomatoes, white wine and parsley, creating a tasty optical illusion: you don't know what is pasta and what squid, until its flavors explode in your mouth. Calamarata pasta is also very good with all kind of tomato sauces, such as Bolognese or Napolitana, and can even be stuffed and baked in the oven.
