Intense, aromatic and slightly spicy, Auricchio's Caciocavallo is the result of more than 140 years of tradition in artisan cheese making. It is always made with milk from herds near the dairy, including Podolica cows, native to the heart of the Italian Apennines. With a soft, compact consistency, this spun paste cheese is similar to provolone, although less fatty, and has an intense, spicy aroma and a persistent, very personal flavour, making it ideal both as a table cheese and as an accompaniment to all kinds of recipes, especially with red wines, red meat dishes and mushrooms.
