Typical of Sardinia, the bottarga are the roe of the mullet, a Mediterranean fish. Its conservation consists of salting and natural drying of the product, which gives it an intense flavor with saline touches. It can be consumed in cut appetizers, or sliced to season a pasta dish.
Store in the refrigerator between 0º and 4º. Suitable for celiacs.
